The Art of Pickling with Camilla Wynne

Join master preserver Camilla Wynne of Preservation Society for this fun, hands-on workshop where you’ll learn how to transform the autumn harvest into delectable pickles, bringing life to your holiday cheese plates and tangy foils to your winter comfort cooking.

The class covers all the basics of canning pickles and chutney, from selecting your produce to proper sterilization, to basic microbiology and we’ll sample some different styles and flavours. You will leave with a jar of each, ready to tackle any acidified vegetable canning project and able to safely modify recipes to suit your taste.

ABOUT THE INSTRUCTOR:

Camilla Wynne is a writer, home preserving teacher, and the founder of Preservation Society, a small batch canning company. She has been a pastry professional for over a decade and is one of Canada’s only Master Preservers. Not content to produce garden-variety jams and pickles, Camilla instead favours products that tell a story or elicit a memory and are often, though not intentionally, inspired by cocktails. She is the author of the eponymous cookbook Preservation Society Home Preserves (available at The Mustard Seed).

Intro to the Keto(genic) Diet

Sat, 9 November 2019, 1:00 PM – 3:00 PM, $40 – $45

Recent stats say that 26% of Canadians have considered the keto diet, but what is it actually? Is it actually healthy? Can you still eat primarily local foods and stay in ketosis? Do you need to be a carnivore or is vegetarian/ vegan keto possible? How much does it cost? What are the potential risks/ rewards?

In this workshop we will be learning about all of the above, from teh Science, Meal Planning, and the Food that makes this diet possible. Dietician Gwyn Xagoraris will lead us through this and more.

  • The Science – what does the diet do, how does it do it, safety, and myths/facts
  • The Planning – label reading, carbohydrate counting, planning meals, moderate protein/high fat/low carbohydrates, making plans for successful keto: what makes a person successful on the diet
  • The Food – costs, meal planning, making, foods available in the market place, & of course some recipes to try for ensuring a few recipes that are the foundation to making the diet a success

Gwyn Xagoraris is a Registered Dietitian & Diabetes Educator at Hamilton Health Sciences, McMaster. She is an an enthusiastic professional who aims to share the best of health care science and practice to everyone she meets. Preserving your own Holiday Gifts with Camilla Wynne

Spread holiday cheer with homemade edible gifts! In this workshop we cover the basics of water bath canning, from selecting your produce to proper sterilization. We then move to the kitchen and prepare one marmalade recipe (such as a Three Citrus-Ginger marmalade) and one chutney (like a Cranberry-Tamarind chutney), both of which make amazing stocking stuffers, hostess gifts, or a pantry arsenal perfect for complementing cheese plates or cozy morning breakfasts. You will leave the class ready to tackle any project and able to safety modify recipes to your taste.
